Alright, yesterday I promised a giveaway of a $50 Carrabba’s gift certificate – here are the details of how to take part. Registered users – who can actually use the Carrabba’s gift certificate – should email me with their favorite gluten-free item from Carrabba’s and what makes it so great. The best description wins. Take a look at the menu as a reminder.

So to recap on the contest rules:

  • Must be a registered user to thesavvyceliac.com, so get registered if you need to. I will check.
  • Email me why you love your favorite Carrabba’s gluten-free menu item at amy {at} thesavvyceliac(.)com by Sunday, February 8th at 12:01 a.m. Central Time.
  • Make sure you live in a place, or are vacationing somewhere, where you can make use of the gift certificate. Here is a list of locations. Also I want someone who eats gluten-free to get this prize. This isn’t a giveaway for someone who can eat anywhere at any time. Honor system people!

I will post the winner and their description/story on thesavvyceliac.com by 12:00 p.m. Central Time on Monday. I will email you back to get your mailing address. Carrabba’s will send it directly to you.

So late yesterday I got a news release from EnjoyLife Foods.  I could have added it to my Valentine’s Day post, but since it was later in the day I thought I would combine it with this update. It looks like they have some recipes to create few chocolaty treats for the celiac in your life.

Sweetheart S’mores

Ingredients:
1 pkg (10 oz) Enjoy Life® Snickerdoodle cookies
3 large marshmallows
1 Enjoy Life® boom CHOCO boom chocolate bar (rice milk or dark chocolate)
Directions:
• Cut marshmallows in half for 6 pieces total. Set aside.
• Break the boom CHOCO boom bar into four sections. Then break each section in half for a total of eight pieces. Set aside.
• Slightly flatten two Snickerdoodle cookies. Use a heart-shaped cookie cutter or a knife to cut out “sweetheart cookie.” Place one piece of chocolate in center of one cookie.
• Slightly flatten a marshmallow piece and place it on top of the chocolate. Cover with remaining cookie. Assemble more s’mores with remaining ingredients.
• Place s’mores on a microwavable plate. Microwave for 10-20 seconds or until the chocolate starts to melt and the marshmallow softens.
• Remove and enjoy!
Yield: 6 Sweetheart S’mores

I’m CHOCO for you! Candies

Ingredients:
2 bars Enjoy Life® boom CHOCO boom chocolate bars (rice milk or dark chocolate)
2 Tbsp Sunbutter® sunflower seed butter
1 Tbsp brown rice syrup
1 Tbsp Enjoy Life® semi-sweet chocolate chips
Directions:
• Break each boom CHOCO boom bars bar into four sections, for a total of eight pieces. Set aside.
• Blend Sunbutter with brown rice syrup. Mixture should pull away from the bowl and form a ball. Set aside.
• Place 1 level teaspoon of Sunbutter mixture on top of 1 section of boom CHOCO boom bar. Flatten and form Sunbutter mixture to cover the boom CHOCO boom bar piece. Cover a tray or plate with wax paper and place finished candies on top. Continue with remaining boom CHOCO boom bar pieces.
• Place 2 tablespoons of chocolate chips in a small plastic sealable bag. Place bag in microwave leaving the top unsealed. Heat in short intervals gently pressing the softened chocolate to make sure the chocolate melts evenly. When chocolate is almost melted, remove bag and press out any remaining lumps. Remove any air from the bag and seal bag. With a scissors, snip a very tiny hole in one corner of the bag. Beginning on the wax paper, drizzle the melted chocolate back and forth over the candies. Allow chocolate to harden about 20 minutes.
• Share and enjoy with those you love!
